Last night I prep'd these Turkey Pesto Meatballs, they are awesome. Since I have lots of leftover pesto I will make some more and freeze them. Its relatively simple to put together, simply get the turkey, add breadcrumbs, basil and cheese. Mix it all together and form balls, that's it.

You can see the prep'd meatballs in the picture below. I prep'd some veggies with olive oil, salt and pepper. We put it in the oven the next day for 30 minutes and they were delish!


Breakfast on the go. Mornings are usually very hectic, since the snooze button is my best friend. So I premake breakfast so that I can just heat and go. Here we have one egg, handfull of spinach, diced onions and diced green bell peppers.
One of my co-worker's last day is tomorrow. We all headed out to Luby's for lunch. Livers and onions, mashed potatoes and mac and cheese. I usually always drink water with lemon when I go out. A big change from my used to be usual Dr. Pepper. But I cannot resist the sweet tea of Luby's. I am addicted.
Dinner- Turkey Pesto Meatballs with a side salad and yes, again with no dressing.
And of course, there was alot of water with cucumber @ the office. This was taken with my phone, please excuse the brightness, it is not that bright in my office.
And lastly, while running errands after putting the baby to sleep, i found these pretty big tote bags at the Dollar Store her in Sugar Land off of Hwy 6. I hope they turn out to be semi-reliable. Hubby is going to school on weekends to get a real estate license. So that means it will be a girls weekend from now on for a while. I am already planning what to do and that includes finally making it around to visiting the farmers market in Houston. The drive in with the baby was always intimidating before, but now that we are really starting to put together alot of healthier recipes that include more produce than I had ever imagined to be using per week. I want to support our local farmers, I hope I find some that are organic, but either way I want food that is locally grown. These bags are perfect for the farmers market. I bought two extra ones for my co-workers who have agreed to go with me.
Thank God, for leftovers! No cooking tonight, wait there is breakfast, off I go.

Yummy!

Its the end of the day again. These meals were put together very quickly and yet there were all pretty yummy . So lets recap before I get in there and get tomorrow's food ready.



Breakfast - Ricotta Spinach bites with cheese, organic blackberries and an organic banana.




Lunch - cucumber water, organic blackberries, salad, grilled cheese sandwich with spinach and carrots.

Dinner- Side salad that I could not finish. I left my balsamic dressing at the office and sadly creamy italian was just ok, but not great. Leftover pasta, ricotta spinach bites (becoming a staple in our home), and the breaded & baked salmon bites. Delish!!! The salmon bites are a keeper. Even my 14 month old ate them right away!!

Am I the only one addicted to water with cucumber slices? Here in Houston its pretty much always summer AKA always in the high 90's. Ok, ok, we have a winter but it comes and go so fast I barely have enough time to put my coat on. And by winter I am talking about weather down in the 50's-60's. Back to the water, love it, love it, love it! It's really refreshing and it takes the edge of just drinking plain ol' water. I have never really been into the Crystal Light packages.

Off I go to prep tomorrow's lunch and dinner.

The world without waves.

I miss Galveston. I miss looking out from the balcony and seeing the waves crashing against the sand. I miss the sweet expression on my daughter's face as she feeds the seagulls. Most of all I miss being able to spend the ENTIRE day looking at her play, nap, eat and play some more. Now that we are officially back I spent the last hour getting my work lunch ready and tomorrow's dinner prep'd.
We will be having Salmon Bites. 1 inched cubed pieces of salmon, breaded and placed into the oven with a side salad.
After letting the salmon bites freeze and settle for 30 minutes. I took the time to clean the countertops and wash the dishes. Lunch was the next battle. I put together this quick sandwich with sauteed spinach with carrots on a toasted sliced bread with a slice of cheddar cheese. I cut up some cucumbers for my water at the office tomorrow. And ran out of the kitchen!
Of course all the bento boxes and sandwich bags were gone and missing.
Tonights dinner was leftovers from last night. Italian sausage, pasta, ricotta spinach bites and a salad.

Breakfast and Lunch is packed.

Hubby has a doctor's appt early in the morning. So, S is off to grandmas house. She is the cutest thing when we pull up to my moms house. She gets super excited when we get her off the car. She runs toward the front door making the most excited little sounds!

For Breakfast:
  • Two circles of a mini waffles with a sprinkle of cinnamon.
  • Scrambled eggs with spinach.

For Lunch:

  • Tilapia
  • Steamed carrots
  • Or the backups
  • Sweet Potato Star
  • Elbows with sauce
  • Chicken Nugget

On the Go Packing!

Tomorrow we are planning a girls shopping spree. I have my sister and mom along for the fun! I hate to try new food away from home just in case my picky eater turns the food away. But in an effort to add more fruits and veggies to her every meal, its a must! I made her bento Xtra large this time for the just in case.

It includes:
  • Grilled Cheese Sandwich (Boarshead American) with sauteed spinach.
  • Kidney beans.
  • Earth's Best Organic Chicken Nugget - also known as the Backup
  • String cheese
  • Organic Cantaloupe
  • Snacks- Earth's Best Organic On-the-go O's Cereal in Apple Cinnamon, Sweet Beet Cookies, Earth's Best Organic chocolate elmos.
  • Horizon Organic Strawberry Milk
  • H2O

Whew!! That's alot, right? Better safe than sorry. She loves cheese and bread lets hope the grilled cheese is a hit! S has loved beans since she was 10 months old. All types of beans in all kinds of sauces. So we make sure to keep them on hand. Whole Food has such a great selection of organic canned beans with NO salt!! We like the o's cereal. We use it as a snack when we go out of the home and she loves them. The sweet beet cookie is also a new find. I just made this recipe thanks to weelicious.com. You MUST go visit this site. It is FULL of yummy ideas and her baby is so close to my S's age, that I will start trying most of them out. My cookies are not as red as hers are, mmmmmm?? I will blame it on my southern beets!! Perhaps we don't like the deep red down here!!! Surely, it was not the way I followed the recipe!! =) I think my beats were waaaaayyyy tooooooo watery! Next time I will drain all that moisture out! Either way, they are pretty good.

And what was sweet little S doing while mommy worked hard in the kitchen? Playing of course! In the room known in the pre-baby days as the living room, now better known as S's playground!

Bento containers make me happy!

The cute little bentos have really been making my life sooo much easier. It's easier to prepare the daily lunches at night before going to work. Hubby just takes them out, heats and serves. It takes the work out of what she has available to eat.
For tomorrow she has the following waiting for her.
Lunch: Earth's Best Organic Baked Chicken Nugget, string cheese, pasta shells with veggies and half of Dr. Praeger's Sweet Potato Littles.

Dinner: String cheese, the other half of the Sweet Potato Littles and pasta elbows with Tilapia and homemade sauce.

If you have yet to try the baked chicken nuggets, careful, they are DELICIOUS!!!! The breading has a great taste. My little one loves them!!!


This is my first time buying the Sweet Potato Littles at Whole Foods. They taste pretty good and warm quickly in the microwave. I found that the texture is quite soft so they are perfect for my little one and her four little teeth.
In other news, IT'S HERE!! The Disney Princess pink and cute portable player for our little princess. How did we get here? Let me tell you. It all started after a very long day at the office. We did not feel like cooking and went out for Mexican food to Pappasito's. Well our princess was sitting in the high chair looking around like always. I turn to look at the table next to me and WHAM!!! I had a "Why didn't I think about that?!?" moment. In the table next to us a family had a portable dvd player for their little one! Perfect! We bought her the Baby Einstein DVD's that she loves! And recently bought her the Pre-School Prep series of the Alphabet and Numbers in both English and Spanish. Definately recommend. Since she does not get to see much TV at home. I figured our treat of going out can become her treat of watching cute characters that make her laugh.
So online I went and found it. With headphone, car charger and remote control, it was a great deal. And of course it's pink! Now to find a carrying case....=)

So many choices!

This weekend I ventured out to China town here in Houston. "Ventured" might not quite be right being that I pass up this neighborhood many times during the week. Nevertheless, I was looking for Bento boxes and came upon this Japenese store http://www.fitjpstore.com/. Check out their video on how to get to their store, can't get lost! It really helped! They have a wonderful selection of Bento products and alot of other items!! I will definately visit again and load up on their neat plastic organization containers. And everything in the store averages $2 bucks!!!! Don't be intimidated if you don't speak Japanese, they have wonderful sales people walking the floor and they are super friendly!!
